baby basil caprese salad
Old can become new again and classic dishes can be refreshed. A caprese salad is delicious any time of the year-as an appetizer, a mouthwatering lunch or served on top of freshly toasted bread. And this twist is a bit lighter and sweeter, with fresh basil microgreens that offer more flavor and a nice tender crunch. A handful of ingredients and a bowl full of flavor and nutrition-what could be better?

Ingredients
Few big handfuls of baby basil
16 oz pearl mozzarella balls, drained
2 pints grape/cherry tomatoes
Few drizzles of olive oil
Few drizzles of balsamic vinagar
Couple sprinkles of salt (to your liking)
Directions
Add all ingredients to bowl and mix gently. Serve immediately. Serves 4-5
