Cold Rolls with Peanut Dipping Sauce

We love that these cold rolls are absolutely delicious and so easy to customize based on your taste! Share with friends or enjoy on your own. This is a dish that is simply meant to just be that-enjoyed.

Ingredients 

1 chicken breast boiled and cut into strips

1 small cucumber cut into small matchsticks

1 pepper cut into small matchsticks

4 oz rice vermicelli, cooked according to package 

Favorite microgreens 

1 package (16) rice paper wrappers

 

Dipping Sauce

6 TBS smooth peanut butter

1/2 cup water

2 TBS rice vinegar

2 TBS honey

2 TBS coconut aminos

2 TBS hoison sauce

 

Directions 

Follow rice paper wrapper instructions for softening. Add a bit of microgreens, chicken, peppers, cucumbers and vermicelli to middle of wrapper. Wrap tightly by rolling and be sure to tuck in sides while rolling. Be careful not to overflow and break wrapper. Whisk all dipping sauce ingredients together. Serve cold rolls with dipping sauce and enjoy. Makes 16 rolls.
